Great summer salad for healthy eaters. Get fresh figs when they are in season, or substitute with dried figs. Delicious salad that fast and easy to make.
- 4 cups Spinach
- 1 Bartlett Pear, cored and thinly sliced
- 1 Avocado, sliced
- 6 fresh Figs, sliced in 1/4
- 4 tbsp Goat Cheese
- 4 tbsp Raw or Candied walnuts
- Coconut Lime Dressing
Place a pile of spinach on each salad plate. Arrange the fruits on top and sprinkle with cheese and nuts. Lightly drizzle with coconut lime dressing or dressing or your choice. Great with balsamic vinegar.
