This super easy peach salsa is a great addition to a summer party meal, lunch or dinner. Quick, healthy, and delicious, it tastes a lot like regular salsa but better.
- 2 medium ripe, firm peaches, pitted and diced
- 1 medium red bell pepper, seeded and diced
- 2 green onions, green and white parts, sliced thinly
- ¼ cup finely chopped fresh cilantro
- 1 tbsp olive oil
- 1 tsp lime juice
- 1 tsp honey
- salt and pepper
Mix together the peaches, bell pepper, green onions and cilantro. In a separate bowl, whist together olive oil, lime juice, honey, and salt and pepper to taste. Drizzle over the peach mixture. Stir and serve with healthy citrus ginger salmon or your choice of chips. Store in the refrigerator.
Makes 2 servings.
