Carob pie is a great substitute for a chocolate pie especially if your are vegan or trying to eat clean. This pie is healthy, delicious, and super easy to make.
Here is the recipe:
- 2 cups raw almonds, finely ground in a food processor or blender
- 1/3 cup honey or agave nectar (for vegans)
- 1 1/2 cups cashews
- 3/4 cup coconut water
- 1/4 cup coconut butter (coconut oil)
- 1/3 cup agave nectar
- 1 tablespoon carob powder
To make the crust, in a mixing bowl combine the ground almonds and honey (or agave nectar), mix well. Press the mixture evenly into the bottom and sides of a pie tin.
In a high-speeding blender, combine all of the filling ingredients and blend until smooth. Pour the mixture into the pie crust and freeze for a few hours or overnight.
